Description

Delight in the explosion of flavors with Quesabirria, featuring tender braised beef and melted cheese layered in crispy tortillas.


Ingredients

Scale
  • 4 Tortillas (preferably corn)
  • 200g grated cheese (Oaxaca or Monterey Jack)
  • 300g birria beef
  • 500ml consomé
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Chopped cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Heat the oil in a pan over medium heat.
  2. Dip each tortilla briefly in the warm consomé.
  3. Place one tortilla in the pan and top it with a generous amount of grated cheese and braised birria beef.
  4. Add another tortilla on top to form layers.
  5. Cook the tortilla until the bottom is crispy, then carefully flip it to brown the other side until the cheese melts.
  6. Repeat this process for all tortillas and fillings until stacked deliciously.
  7. Serve your Quesabirria with warm consomé on the side, garnished with fresh cilantro and lime wedges.

Notes

Marinate beef a day ahead for deeper flavors. Adjust the filling and cheese types to your liking and consider using an air fryer for cooking.
