Description

A delicious and refreshing vinaigrette made with ripe peaches, honey, Dijon mustard, and balsamic vinegar that elevates any salad or dish.


Ingredients

  • 2 ripe peaches, pureed
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 4 tablespoons balsamic vinegar
  • 6 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Puree the ripe peaches in a blender or with an immersion stick until smooth, then transfer to a bowl.
  2. Add the honey and Dijon mustard, and mix thoroughly until the mixture is homogeneous.
  3. Stir in the balsamic vinegar to combine the sweet and tangy flavors.
  4. Drizzle the olive oil slowly into the mixture while continuously stirring. This will emulsify the vinaigrette, creating a creamy consistency.
  5. Season with salt and pepper to taste.
  6. Serve the vinaigrette over fresh greens or use as a marinade for grilled meat or vegetables.

Notes

For best flavor, use ripe peaches. This vinaigrette keeps in the fridge for up to a week. Shake well before use.
